Ingredients:
3 - eggs
200 gm - sugar
1/2 tsp - salt
160gm - pumpkin (steamed and mashed)
100gm - coconut milk
140gm - corn oil
300gm - flour
2 tsp - double action baking powder
1/2 tsp - sodium bicarbonate
60gm - pumpkin seed
Preheat steamer.
Whip eggs, sugar and salt until creamy.
Whip in the mashed pumpkin and coconut milk until well-blended.
Add in corn oil, mix till well-blended.
Add in sifted flour, double action baking powder and sodium bicarbonate, mix till well-combined.
And lastly, add in pumpkin seed and mix till well-blended.
Pour batter into greased and lined loaf tin.
Steam for 50 minutes.
Remove from steamer and leave it cool before removing it from the tin and serve.
Hi, I am attracted to the way you steam your pudding. Do you steam with a wok and if so, do you put your pan on top of the stand? or place the whole pan on top of the wok halfway submerged in water? Appreciate your feedback.
ReplyDeleteHi, thank you for your comments. If you refer to the picture that I posted here, I actually used an electronic steam oven or steamer. But, I also experienced the same result using a 3-tier steamer by cook by gas stove. If you wish to use a wok, is advisable for you to put the pan on top of the stand and make sure you use some wet clothing to cover the side of the cover of the wok to make sure no heat were lost during the steaming.
