Sweet & Sour Pineapple Meatballs to end #2014


It was three months since my last post on this blog.  I wish to extend my thousand apologies to all the readers or viewers of this blog.  Its been busy months since then......(sighing).

Today marked the last day of 2014, a year full of challenges in Malaysia.  With a complicated heart while writing this post as we Malaysians had confirmed a bad news on an airline tragedy happened three days ago.  But life still have to goes on, my writing has to go on, this blog has to go on.... Let's say good-bye to 2014 and welcome 2015 with a positive heart.

This recipe is an idea to welcome the new year, perfect for home parties or gatherings.  Sweet and Sour Pineapple Meatballs is the name.  You can cook it as a dish or you can make it as a snack or bites food if you are organizing any parties, potluck or gatherings.

I choose to use minced pork meat but you have a choice of beef or mixture of both.  I prefer to deep fried the meatballs before I combine them with the sauce.  As for the pineapple I used sweetened can pineapple chunks.  Please don't throw away the juice, as I will use it as one of the sauce ingredients.


Let's get into the kitchen and I will show you how make this yummy meatballs.

INGREDIENTS

600 gm minced pork meat or beef or mix
1/2 carrot, fine grated
5-6 sprigs of spring onions, chopped
1 egg
1/2 tbsp salt
1 tbsp Worcestershire sauce
1 tsp ground pepper
1 tsp ground black pepper
2 tbsp corn flour

2 cups of cooking oil for frying


1 can of sweetened pineapple 

(Drain pineapple, reserve the juice)

Sauce:

2 tbsp of cooking oil
3 cloves of minced garlic
Juice from the sweetened pineapple 
2 tbsp tomato ketchup
2 tbsp Worcestershire sauce
A pinch of salt to taste
1 tbsp corn flour 
1 tsp of sugar (optional)
(Combined all the above ingredients but only half portion of the pineapple juice)

Garnishing:
Toasted sesame seeds



INSTRUCTIONS
Combined minced meat with all the rest of ingredients.


Shape the mixtures of minced meat to about 1 inch of balls.  I used the 1.5 tbsp measurement spoon to help me.


Set aside all shaped meatballs


Heat-up oil in a pan or pot.  Add in meatballs and fry until golden brown.


Drain-up the meatballs and set aside.  


This portion of minced meat made 24 pieces of meatballs.


In a pan heat-up 2 tablespoon of oil and add in minced garlic, saute until golden brown.


Add in mixture of tomato ketchup with the rest of the others ingredients as instructed above.


Add in with the remaining of pineapple juice.  You have a choice to add in all or up to the taste that you desire and you may add in sugar to enhance the taste of the sweetness.


Returned all fried meatballs in the pan of sauce.


Cover the pan and simmer the meatballs in low heat for 1-2 minutes.


Add in the pineapple chunk and mix well and let it cook for another 1-2 minutes.


Sweet and Sour Meatballs with Pineapple is ready to serve.


Transfer them on a plate and garnish with toasted sesame seeds.  Here you go!
